Kentucky Chocolate Pecan Pie

This delicious treat is served at Churchill Downs and at Kentucky Derby parties everywhere on Derby Day.

Prep Time: 30 minutes

Cook Time: 45 minutes

Total Time: 1 hour, 15 minutes

Ingredients:

  • 3 eggs, lightly beaten
  • 1 c. light corn syrup
  • 1/2 c. brown sugar, packed
  • 1 c. chopped pecans
  • 1/4 t. salt
  • 1/2 t. vanilla
  • 6 oz. package semi-sweet chocolate morsels
  • 1 9 inch deep dish pie shell, unbaked

Preparation:

Preheat oven to 450 degrees. Mix all ingrediaents and pour into pie shell. Bake for 10 minutes and reduce heat to 350 degrees for 35 minutes more. Serve with whipped cream or vanilla ice cream.

Great taste and works with GF modification, Member rinnie1

I'm Celiac, so I modified this recipe a little, using a gluten-free (GF) pie crust from Whole Foods, and Bob's Red Mill GF flour. It was so easy to fix, just mix everything together and dump it into the crust. I took it to a dinner party where there were no other Celiacs (translation: not accustomed to the stuff more akin to sawdust that we often have to eat to stay GF), and it was GONE so fast!! Everyone raved about how delicious the pie was! It's going on my list of recipes that work well modified for Celiacs, and I'll be taking it to every gathering with that particular group of people -- by popular demand!!
